Healthy and delicious Guacamole Toast

Typically I’m not a big fan of avocados as I find them too rich for my stomach. BUT, I’ve been seeing a lot of posts about avocado toast and thought I’d try it. I loved it! And, it was not difficult for me to digest (a big plus).

I used half of this recipe:

INGREDIENTS

2 ripe avocados

Juice of 1 lime

1/2 tsp. kosher salt

1/2 c. cherry tomatoes, quartered

1/2 small red onion, minced (I used the small green onions)

1/2 jalapeƱo, minced (optional)

1 clove garlic, minced

4 slices sourdough bread, toasted

1 tbsp. fresh cilantro, chopped

DIRECTIONS

  • In a bowl, mash together avocado with lime juice and kosher salt. Stir in tomatoes, onion, jalapeno, and garlic until combined.
  • Spread on slices of bread, then sprinkle with cilantro. I chopped the cilantro and include it in the mix. Your choice!
