(Video) Chicken Peanut Stir Fry

This is a recipe of my own creation. Add whatever veggies you have on hand. The more veggies, the healthier it becomes.

Ingredients:

  • broccoli
  • cauliflower
  • carrots
  • zucchini
  • mushrooms
  • onions
  • chicken breast – boneless, skinless – cubed
  • Peanut Sauce (I used TSANG peanut sauce)

Method: chop and slice all veggies, stir fry in oil. Cook to ‘El Dente’. In a separate pan, stir fry the cubed chicken. Add as much peanut sauce as desired. Add the veggies to the pan with the chicken. Cook a few minutes. Serve over rice.

As mentioned in my video, this dish freezes well.
