Remove the tough end of the asparagus by ‘snapping’ one or two stems and then cutting the balance of the asparagus to the same length.
Marinate the asparagus in the following mixture for a minimum of 30 minutes:
- 3 tablespoons of balsamic vinegar
- 2 tablespoons of fresh lemon juice
- 1 tablespoon o f olive oil
- 1 tablespoon of low-sodium soy sauce
- black pepper
Preheat oven to 400 degrees. Spray a sheet pan with cooking spray and place the asparagus in the oven until almost tender. This will depend on the amount of asparagus and the thickness of the asparagus you are roasting.
When almost cooked, remove the pan and sprinkle with grated Parmesan cheese. Return ti the oven until cheese is melted. Broil for a couple of minutes to crisp up the asparagus if desired.
